Veggie Pita Pizza

*Makes Two Servings

4 corn tortillas (15 g carbs or less)
oil sprayer
½ tsp. Morton lite salt, divided
½ ground pepper, divided
¾ c. tomatoes, diced.
1 ½ tsp. butter
1 c. green bell pepper, chopped
1 c. mushrooms, thinly sliced
¼ c. green onion, chopped
1 ½ tsp. thyme
1 tsp. basil
1 tsp. oregano
2 cloves garlic, thinly sliced

Arrange pitas on a baking sheet. Spray lightly with oil sprayer and sprinkle with half of salt and pepper. Arrange tomatoes on bread.

Melt butter in skillet over medium heat. Add mushrooms and let cook for 3-5 minutes or until golden brown on bottom. Add green pepper, green onions, thyme, oregano, basil and garlic. Season with remaining salt and pepper and cook for 3-5 minutes or until garlic is fragrant.

Divide vegetable mixture between pitas. Bake pitas in preheated oven for 8-10minutes or until edges of pita are golden brown and crisp. Remove from oven and cut into slices. Enjoy!

Homemade Sweet Potato French Fries

As tempting as they are, those fast-food French fries contain unhealthy fat, preservatives and sodium and lack the nutrients and protein that help you to feel satiated. Satisfy a fry “craving,” with these delicious homemade sweet potato fries and notice the difference.

½ sweet potato, sliced into strips
1 egg white
dash or Morton Lite Salt
dash of black pepper

Coat sweet potatoes in egg white. Spray cookie sheet with an oil mister and spread potatoes on the sheet. Season and bake at 325 degrees F. for 15 minutes, or until golden.

Strawberry Cheesecake

1 package Divine Cheesecake Dessert Thermo-Snacks
1 packet sweetener
½ tsp. vanilla extract
dash of Morton Lite Salt
12 small strawberries, chopped
5 ounces water

Mix together Thermo-Snack, sweetener, salt and strawberries. Add in water and vanilla extract. Mix again. Chill before serving.

Oven Fried Chicken

This take on traditional fried chicken has much less fat content and is a healthier option for fried chicken lovers. This version is packed with flavor from the herbs and spices and will leave you feeling satiated, not lethargic.

6 ounces chicken
1 Package Sour Cream Crunch O’s Thermo-Snacks rolled out to crumbs
½ tsp. oregano
½ tsp. parsley
½ tsp. rosemary
½ tsp. thyme

Place chicken breast into a medium-sized pan. Combine all seasonings with Sour Cream Crunch O’s Thermo-Snack. Sprinkle mixture onto chicken and bake at 375 degrees F. for 30 minutes. Yum!
