Zucchini Beef Casserole

Casseroles are a popular family dish for a lot of different reasons, one of which being that they are easy! This delicious recipe can very easily be multiplied to accommodate the entire family, or frozen for a quick meal option later. Bring back an old classic with a healthy touch tonight, because eating healthy can be delicious!

 

Zucchini Beef Casserole

  • 4 ounces ground sirloin
  • 2 small green onions, finely chopped
  • 1/2 cup zucchini
  • 1/2 cup mushrooms, sliced
  • 1/2 medium tomato, chopped
  • dash of Morton Lite Salt
  • dash of black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon oregano
  • sprinkle of stevia

Boil green onions until tender. Cut zucchini crosswise in 1/4″ slices. Use vegetable oil mister to grease pan. Put onions, zucchini, mushrooms and tomatoes in pan and cook for 3-4 minutes over medium heat, stirring occasionally. Turn into baking dish. Cook beef until browned and drain fat. Add salt, garlic powder, pepper, oregano, stevia and meat. Mix well. Bake at 350 degrees for 40 minutes. Enjoy!
