Spice Up Your School Lunches with These Awesome Recipes!

In celebration of International School Meals Day here are some great recipes for school lunches! It’s no secret that school lunches are substantially lacking in the nutrients, vitamins and healthy ingredients recommended for children in their daily diets. Changing to a healthy lifestyle has no age limit, which is why SlimGenics wants to teach children the importance of practicing healthy habits early on in their lives.

Children and teens can avoid eating over-processed school lunches by learning to pack healthy meals. Below, we’ve compiled three easy recipes you can cook yourself or with your family the night before and bring as tasty leftovers to school the next day. Not only will you be getting all of the nutrients you need, your friends will be so jealous of your delicious packed lunches!

Julie’s Beef Tacos

Everyone loves tacos! Try this delicious recipe and save enough to pack as lunch the next day. You can eat as a taco or transform this recipe into a delicious taco salad!

4 oz. ground sirloin
6” corn tortilla, crispy*
1 c. lettuce, shredded
1 medium tomato, chopped
1 tsp. butter

Directions:

Brown meat in sauté pan and drain excess fat. Add Julie’s Taco Seasoning (see below). Simmer until all liquid is absorbed. Serve with crispy tortilla, lettuce and tomato. Garnish with fat-free ranch dressing, if desired.

*Crispy Corn Shell: when you begin cooking the beef mixture, spread butter over tortilla, This will help it to brown more nicely. Place on center oven rack at 450 degrees. Bake until desired crispiness.

Julie’s Taco Seasoning  (Mix all ingredients together)

1 clove fresh garlic, minced
1/8 tsp. chili powder
¼ tsp. cumin
¼ tsp. oregano
1/8 tsp. red pepper flakes
¼ tsp. garlic powder
¼ tsp. onion powder
1/8 tsp. Morton Lite Salt
¼ tsp. paprika
¼ c. water

Broccoli and Cheese Casserole

For a rich and hearty meatless option, try this delicious casserole. It’s so easy; you can make it the night before and triple the recipe for multiple meals! Perfect to reheat the next day for lunch!

1 c. broccoli
5 oz. 1% or 2% cottage cheese
1 pkg. Creamy Chicken Soup Thermo-Snack

Boil broccoli until tender. Combine all ingredients in an over-safe casserole dish. Prepare Thermo-Snack as directed and pour over mixture. Bake 15 minutes at 350 degrees.

Spiced Chicken Salad

This delicious salad is a perfect cold option for a school lunch. Impress your peers with this spiced-up version of traditional chicken salad.

6 oz. chicken breast, cooked and cubed
2 stalks celery, minced
2 small green onions, minced
½ c. lettuce, shredded
1 small apple, chopped
½ tsp. curry powder
1 Tbsp. fat-free Italian dressing

Combine all ingredients, mix well. Chill for one hour and serve cold.
