Salmon Stuffed Peppers

While BBQ’s typically call for large amounts of red meat and processed hot dog products (even writing that makes me cringe!), there’s no reason to not switch it up and offer a healthier option! We love serving salmon at BBQ’s, as the flavor is less “fishy” than other fish, yet lighter and healthier than most grilled meals. Plus, salmon is packed with Essential Fatty Acids (EFA’s) which, aside from being an essential nutrient, can help to improve the appearance of hair, skin and nails!

When selecting salmon at the grocery store, look for “wild caught” on the label, as these options have less fat and more protein as compared to their farm-raised counterparts.

These Salmon Stuffed Peppers are a favorite side-dish to serve at any summer gathering! Try this grilled pineapple and chicken kabob for another healthy summer BBQ hit.

Salmon Stuffed Peppers Recipe

  • 1 bell pepper, medium
  • 1/4 cup brown rice
  • 1/2 cup cabbage
  • 1/2 cup turnip greens
  • 4 oz. salmon
  • 1 packet Vegetarian Chili and Beans Thermo-Snacks™
  • 1/2 teaspoon lite salt
  • 1 teaspoon olive oil
  • Cayenne pepper, to taste
  • Mrs. Dash® Onion and Herb, to taste
  • Mrs. Dash Original Blend, to taste
  • Garlic powder, to taste

Boil brown rice to desired tenderness.

Prepare Vegetarian Chili and Beans Thermo-Snacks according to packaging instructions and set aside.

With olive oil, begin to sauté cabbage and turnip greens, and add seasonings to taste. Cook vegetables to desired tenderness, remove from heat and place in a separate bowl.

Add salmon to pan to absorb some of the great flavors and seasoning left from the greens and cabbage. Pan cook the salmon for 3 minutes on both sides and remove the skin. Return greens and cabbage into pan once you’ve cooked salmon to your preference. Begin breaking the salmon up and mixing with your greens and cabbage over light heat (1 minute is the suggested cooking time).

Combine all contents (rice, chili, salmon, greens and cabbage) in one bowl and mix. Place the cleaned and deseeded pepper on a grill until several grill marks are visible. Stuff the pepper with rice, chili, salmon, greens and cabbage. Enjoy!
