Purely Delightful Vegetarian Dishes

Why does meat get all the attention? Sometimes the best dishes are a beautiful mix of vitamin and mineral rich vegetables packed with unbelievable flavor. We’ve put together four of our favorite vegetarian eats that make for wonderful meals and two very delicious snacks. The Slim-Repair® Muffin is a favorite and makes a wonderful chocolate-y treat to start or end the day.

Crispy Eggplant Delight

1 serving | 1 Vegetable, 1 Starch, 1/2 protein, 1 Fat

1/4 small eggplant
1/4 teaspoon Morton® Lite Salt
4 slices Melba® Toast
1 large egg
1 teaspoon butter

Slice eggplant into rounds. Salt lightly and allow to drain 10 minutes. No need to peel. Process toast rounds into crumbles. Slightly beat egg in separate bowl. Allow butter to melt in pan. Submerge eggplant slices in egg, then dip into crumbs (both sides). Over medium heat, saute until desired crispiness (approximately 5 minutes on each side).

Slim-Repair® Muffin

1 serving | 1⁄2 Protein and 1 Slim-Repair or SuperGenic Thermo-Snack

1 egg, beaten
1 tablespoon water
2 scoops Slim-Repair Detox Shake

Mix ingredients and bake at 350 degrees F. for 10–15 minutes, until done. May microwave in glass bowl or coffee mug for 1:20 – 1:30 minutes on high.

Minestrone Soup

4 servings | 2 vegetables, 1/2 fat, 1 starch

2 teaspoons olive oil
4 ribs celery
2 cups chopped zucchini
4 cloves garlic, minced
1/4 teaspoon dried oregano
1/4 teaspoon pepper
1/3 teaspoon Morton® Lite Salt
3 cups vegetable broth
2 cup green beans, cut into 1” pieces
1 cup brown rice
4 sprigs oregano (garnish)
1/4 cup Italian flat leaf parsley

Heat olive oil in large saucepan over medium heat. Add celery, zucchini, minced garlic, dried oregano, pepper, and salt. Cook, stirring frequently, for 4 minutes, or until the vegetables begin to soften. Add the broth, green beans, and brown rice. Bring to a boil over high heat. Reduce the heat to medium-low, cover, and simmer for 8 minutes, or until heated through. Ladle into bowls and garnish with oregano sprigs and parsley.

Slow Cooker Applesauce

6 servings |  1 fruit

6 apples, peeled and cored
1/3 cup water
2 tablespoon zero calorie sweetener
1⁄2 teaspoon cinnamon

Place all ingredients in a crockpot. Cover and cook on low for 8 hours. Stir before serving and ENJOY!
