Meatballs with BBQ Sauce

Savory meatballs are a delicious favorite in many kitchens, but keeping them healthy can be a challenge. Thankfully, this deliciously healthy Meatballs with BBQ Sauce recipe will satisfy that craving while staying on-plan! Combine these two delicious recipes for a new flavor at the dinner table, or use them individually to complement your favorite dishes!

 

BBQ Sauce

  • 1 medium tomato, chopped
  • 1 cup water
  • 1/8 teaspoon garlic powder
  • 5 small green onions, diced
  • 1 packet stevia
  • 1/8 teaspoon oregano
  • 1 teaspoon chili powder
  • juice from 1/2 fresh lemon
  • 1 teaspoon lemon peel, grated
  • 1 Tablespoon apple cider vinegar

Pureé tomato in a blender. Combine tomato and water in a medium saucepan. Simmer over low heat for 10 minutes. Add all ingredients (EXCEPT lemon juice, peel and vinegar) and simmer for 20 additional minutes. Add remaining ingredients and simmer for another 10 minutes.

Pour sauce into blender again. Pureé until smooth. Pour into an airtight container to store. Refrigerate until cool.

Meatballs

  • 4 ounces ground sirloin
  • 1 slice diet (whole grain) bread, moistened
  • 1/2 medium green pepper, chopped fine
  • 1 medium tomato, chopped
  • 1/2 cup water
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • dash of oregano
  • dash of Morton Lite Salt
  • dash of black pepper
  • dash of dill (optional)

Mix all ingredients. Form into small meatballs. Boil tomato in water, drop in meatballs. boil until meat is cooked. Shake on some dill if desired.
