Enjoy Dessert Again with These Healthy Recipes

Like most of us, you probably have a sweet tooth and struggle saying no when it comes to a delicious cupcake, cookie or slice of pie. But don’t let your craving for something sweet get in the way of your weight loss! Below are some wonderful recipes—some created by our own program advisors—for you to enjoy an indulgent treat while staying on track with your weight loss.

Apple Pie

Makes 1 serving

3 Melba Toast rounds, crushed
1 tbsp. butter
½ tsp. cinnamon
½ teaspoon sweetener
1 small apple, sliced
1 package Dulce de Leche Pudding Thermo-Snacks 

Place Melba Toast crumbs in a bowl. Mix butter, cinnamon and sweetener in a microwave safe bowl. Microwave mixture until melted. In a backing dish, bake apple slices for 10-15 minutes at 350 degrees F. Pour the melted butter mixture over the Melba rounds breadcrumbs. Dice baked apples then add to Melba mixture. Prepare Thermo-Snacks as directed. Drizzle Thermo-Snacks pudding over the top and serve.

Birthday Cupcake with Frosting

Makes 2 cupcakes

1 package Old Fashioned Stack Pancake Mix Thermo-Snacks 
1 teaspoon sweetener
1 egg, beaten
2 ounces water

Frosting
½ package Divine Cheesecake Thermo-Snacks
½ package Cappuccino Hot Drink Mix
3 ounces water

Preheat oven to 350 degrees F. Combine Pancake mix, sweetener, egg and 2 oz. water. Divide mixture between two individual muffin tins. Bake for 12 minutes and cool.

Frosting: Combine Cheesecake mix, cappuccino mix and 3 oz. of water. Let sit for 10 minutes. Spoon over cupcakes and enjoy!

STRAWBERRY CHEESECAKE

Makes 2 servings

oil sprayer
4 slices Melba toast, crushed
8 ounces 1% or 2% cottage cheese
2 packages Divine Cheesecake Thermo-Snacks
2 packages Strawberry Crème Shake and Pudding Thermo-Snacks
6 packets stevia
2 cups water

Spray small pie in with oil sprayer. Line pie tin with Melba toast to form crust. Save a few crumbs to sprinkle on top of pie. Blend remaining ingredients in a food processor or blender until smooth. Pour into pie tin and sprinkle top with remaining breadcrumbs.

Place in refrigerator overnight to set. Enjoy!

Cappuccino Supreme Layer Cake

Makes 2 servings

1 package Old Fashioned Stack Pancake Mix
1 package Divine Cheesecake Thermo-Snacks
1 Cappuccino Hot Drink Thermo-Snacks
1 cup plain Greek yogurt
1 package sweetener

Make 3 small pancakes as directed on package and set aside. Mix together yogurt, Cappuccino mix and sweetener (leave some cappuccino mix to garnish). In a separate bowl, make Cheesecake as directed on package.

Place 1 pancake on a plate and spread half of the Cheesecake mixture on top. Place on pancake on top and spread half the Cappuccino and yogurt mixture on the pancake. Place last pancake on top and spread with remaining Cheesecake mixture and a dollop of Cappuccino mixture. Garnish with Cappuccino powder. Enjoy!

Blueberry Cream Cake

Makes 2 servings

1 package Vanilla Delight Shake and Pudding Thermo-Snacks
8 ounces water
½ cup blueberries
2 brown rice cakes
dash cinnamon

Prepare Vanilla Delight Shake and Pudding Thermo-Snacks with cold water to make a pudding.

Spread pudding over rice cakes. Top with blueberries and sprinkle with cinnamon.
