Chicken Tortilla Soup
- 1 Chicken Noodle Soup Thermo-Snack
- 2 cups water
- 6 ounces chicken breast, diced
- 1/2 cup zucchini, sliced
- 1 medium tomato, diced
- 3 small green onions, diced
- 1/2 corn tortilla
- 1/2 teaspoon parsley
- 1/2 teaspoon basil
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- Dash of red chili flakes
Combine Thermo-Snack and water in a pan over medium-high heat with herbs and seasonings. Add prepared chicken and green onion and bring to a boil. Add zucchini and tomatoes. Reduce heat. Simmer for 10-15 minutes. Cut up tortilla into strips and spritz lightly with oil mister, then cook in a small pan at medium-high heat until crispy. Add the tortilla strips to the soup. Simmer another 5-10 minutes. (You may use an immersion blender to purée some of the solids.)
