Guacamole Stuffed Peppers

Can we talk about avocados? For example, would you be shocked to learn that, botanically speaking, an avocado is a giant berry with a single giant seed? Or that it is high is monounsaturated fat? Or that it’s mild flavor can be used in both sweet and savory cuisine? Or that it is best eaten raw, since heat can make it very bitter? Or that, as much as us humans love it, it is considered toxic to many animals including cats, dogs, birds, and horses?

Oh – I get it. You don’t care. You just want to make guacamole.

Well, here is a delicious guacamole that you can stuff into baby bell peppers and serve as a party appetizer that is so good, no one will ask for the chips.


Guacamole Stuffed Baby Pepper Appetizers

  • 1 cup onion, finely chopped
  • 3 ripe avocados, halved and pitted
  • 1 lime, juiced
  • 1/2 serrano chili, finely minced
  • 1/4 cup cilantro, finely minced
  • 1/2 teaspoon light salt
  • 1/2 teaspoon freshly ground black pepper
  • 48 baby bell peppers, halved lengthwise

Place onion in a medium bowl. Use a spoon to scoop avocado flesh out of skins and into bowl with onion. Use a fork to gently mash the avocado and combine with the onion.

Add lime juice, serrano, cilantro, salt, and pepper. Continue to mash with fork until guacamole reaches desired consistency.

Use a spoon to remove any seeds and veins from baby peppers. Use a teaspoon to scoop a small amount of guacamole into each pepper half. Sprinkle with additional black pepper and minced cilantro before serving, garnish with additional slices of lime.

Makes 12 servings.
