Baked Sweet Potato Latkes

Latkes, or potato pancakes, are traditionally made with russet potatoes, which are extremely starchy – a.k.a. not a good idea for those trying to lose weight!

Stay true to your Plan and your weight loss goals by using a healthier option like sweet potatoes to make your latkes, instead!

Healthy Sweet Potato Latke Recipe


  • Ā 2 sweet potatoes
  • 1 carrot
  • 2 eggs
  • 1/4 teaspoon MortonĀ® Lite Salt
  • Oil sprayer

Preheat oven to 400 degrees, and lightly coat baking sheets with cooking spray.

After peeling the sweet potatoes, finely grate them with the carrot and place in a large bowl. Add eggs and salt, folding mixture until all potato and carrot pieces have been coated.

Scoop a 1/4-cup of the mixture, and drop it onto a baking sheet, flattening with a spatula. Arrange the latkes about 2 inches apart, and spray the tops lightly with oil sprayer.

Bake in oven until bottoms are lightly browned. Flip the latkes, and place back in oven until the bottoms are lightly browned and the cake is cooked through.

Allow to cool before serving.

Latkes are often served with sour cream – for a healthier option, serve with a dollop of Greek yogurt or alongside a delicious Cedar Plank Salmon!
