Summer Salsa Gazpacho

2 vegetables – 1 fat – 1 Thermo-Snack

Summer Salsa Gazpacho

Ingredients

  • 4 Tomatoes
  • 1 C. water
  • Morton Lite Salt® to taste
  • Pepper to taste
  • 4 C. of one or combination of the following chopped vegetables. Cucumbers, bell peppers, celery, or bean sprouts.
  • 4 packages of Cheesy Potato Zippers Thermo-Snack
  • 4 Tbsp. olive oil

Puree tomatoes in a blender with water. Add salt and pepper to taste. Simmer tomato mixture over low heat for 10 minutes. Cool in refrigerator for a minimum of 1 hour. When ready to serve, combine 1 cup of tomato mixture with 1 cup of chopped vegetables and 1 Tbsp. of olive oil. Top with one package of crushed Cheesy Potato Zippers and enjoy!
