Happy (early) Thanksgiving!
I hope that you will enjoy a wonderful day of nourishment for your body and soul. When planning Thanksgiving dinner this year, I was mapping out a true feast; even if there are just the three of us. In reviewing the menu with my husband and trying to determine what I would and would not eat to stay on track he responded, “Who ever said that Thanksgiving has to be about pigging out?” And you know what? He was right! I will make a turkey, of course, but it will be healthy. I will also make on-plan side dishes with an emphasis on vegetables, not starches, and I will create some new recipes for the days to follow.
The first of which is this week’s recipe, Healthy Turkey Sliders, which are the perfect way to use your leftover turkey breast. These sliders are super simple, healthy, great for company, and can be topped with baby arugula, tomato, green onion and even thinly sliced cucumbers. Remember, Sneaking in your Vegetables is crucial to a balanced diet. My daughter, who does not enjoy spicy things, loved these turkey sliders with a side of popcorn cauliflower and celery sticks.
Healthy Turkey Burgers Recipe and Ingredients
- 2 tablespoons light mayonnaise
- 1 teaspoon lemon juice
- 1 teaspoon prepared horseradish
- 10 ounces of leftover cooked turkey white meat, sliced (warmed or cold)
- 2-4 on-plan slider buns (quantity depends on desired portion and nutritional information)
- Assorted vegetable toppings, as desired
In a small bowl, whisk mayonnaise with lemon juice and horseradish. Lightly toast buns, if desired, and top with equal portions of cooked turkey. Spoon horseradish mayo liberally on top of turkey and add top half of bun to complete sliders. Serve with cauliflower popcorn and/or vegetable crudité.
